1 cup - 200g unsalted butter, browned and softened
1 cup - 200g sugar
2 large eggs
2 tsp fine vanilla
1 tsp salt
2 tsp citrus zest
3 cups - 360g AP flour
- Preheat oven to 350 degrees. Line two baking sheets with parchment and set aside.
- In a large bowl, cream butter and sugar with a whisk until pale and fluffy. Mix in vanilla and eggs, incorporating one at a time just until combined.
- In a separate bowl, whisk together flour, salt, and zest. Add flour mixture to wet ingredients and mix with a sturdy spoon until a soft dough forms, taking care to scrape down sides of bowl periodically as you go.
- Gather dough into a disc and wrap in cling film. Chill dough in refrigerator for at least 30m.
